- Abstract
- Oysters in Korea are consumed in a special way for the purpose of making kimchi as well as for the general consumption. Nowadays the changes in consumers' interest and the timing of oyster production are observed and this induce to changing pattern of the consumption of oysters. The present study focuses on changes in oyster consumption behavior depending on the demographic characteristics of consumers by dividing the consumption patterns into general consumption and special consumption. The raw data of the ‘2018 Consumption Behavior of aquaculture products’ conducted by the Korea Maritime Institute is used and Ordered Logit model is applied for the empirical analyses. Estimation results indicate that consumption is influenced by household type and a significant relationship between oyster utilization for making kimchi and oyster consumption is revealed.
